Menilik kembali manfaat dari sisa produksi tersebut, tim Kuliah Kerja Nyata Pengabdian untuk Masyarakat (KKN Abmas) Institut Teknologi Sepuluh Nopember (ITS) mengolah limbah tahu menjadi Nata de Soya. Kegiatan ini memberdayakan masyarakat Kampung Dinoyo, Surabaya, Sabtu (29\/07).<\/span><\/p><\/blockquote>\n<p><span style=\"font-weight: 400\">Ketua tim KKN ITS, Aliefia Rahma, mengungkapkan bahwa Kampung Dinoyo memiliki pabrik tahu tertua di Surabaya. Dalam proses produksinya, pabrik ini menghasilkan limbah cair dan padat yang sebenarnya masih mengandung nutrisi dari kedelai. \u201cJika langsung dibuang ke lingkungan justru akan menimbulkan pencemaran dan bau yang tidak sedap karena kadar proteinnya tinggi,\u201d ujar mahasiswa Departemen Teknik Kimia Industri tersebut.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Pengolahan limbah tahu menjadi Nata de Soya ini dipilih Aliefia dan tim karena proses pembuatannya yang mudah. Nata de Soya sendiri adalah makanan berbentuk nata yang padat, putih dan transparan. Selanjutnya, ZA (Amonium Sulfat) ditambahkan untuk memberikan nitrogen bagi bakteri yang akan digunakan. Selain itu, penambahan cuka juga dilakukan untuk menciptakan lingkungan asam yang sesuai bagi bakteri <\/span><i><span style=\"font-weight: 400\">Acetobacter xylinum<\/span><\/i><span style=\"font-weight: 400\">.<\/span><\/p>\n<p><i><span style=\"font-weight: 400\">Whey tofu<\/span><\/i><span style=\"font-weight: 400\"> yang telah diolah kemudian didinginkan dan dicampur dengan cairan bakteri. Setelah itu, <\/span><i><span style=\"font-weight: 400\">whey tofu<\/span><\/i><span style=\"font-weight: 400\"> dipindahkan ke wadah dan ditutup rapat untuk mencegah masuknya bakteri dari lingkungan luar. Selama 8 hingga 10 hari, <\/span><i><span style=\"font-weight: 400\">whey tofu<\/span><\/i><span style=\"font-weight: 400\"> akan mengalami proses pematangan. Setelah matang, <\/span><i><span style=\"font-weight: 400\">whey tofu<\/span><\/i><span style=\"font-weight: 400\"> direndam dalam air selama tiga hari berturut-turut.
