Hal inilah yang menginspirasi Tim Pengabdian Masyarakat (Abmas) dosen dan mahasiswa Institut Teknologi Sepuluh Nopember (ITS) untuk melakukan pelatihan dalam pengelolaan sumber daya alam serta pemasaran produk khas Wonosalam kepada masyarakat luas.<\/p><\/blockquote>\n<p>Herdayanto Sulistyo Putro SSi MSi, salah satu tim dosen mengungkapkan bahwa di Desa Carangwulung, Kecamatan Wonosalam sendiri terdapat sekitar 50 peternak sapi perah. Hasil susu segar dari tiap peternak di desa tersebut bisa mencapai 15 liter sehari. Akibat tidak tahan lama, susu segar yang telah diperah harus langsung dijual kepada perusahaan susu dan es krim yang ada di sana.<\/p>\n<p>Melihat hal ini, Herdayanto bersama tim Abmas ITS mengusulkan adanya pembuatan produk yogurt langsung dari susu segar para peternak tersebut agar bisa menambah ketahanan, serta meningkatkan nilai jual dan gizi. Baru-baru ini juga kopi mereka sudah terbukti kualitasnya. \u201cOleh karena itu, kami mengusulkan agar mereka membuat yogurt khas Wonosalam dengan perasa durian dan kopi. Produk yogurt ini kami namai Wonoyo,\u201d jelas ketua tim Abmas ITS itu.<\/p>\n<p>Demi kelancaran, dibentuk kelompok-kelompok kecil yang didampingi oleh dosen dan mahasiswa dari ITS yang akan fokus pada aspek tertentu. Kelompok ini yaitu tim produksi, tim administrasi, tim lapangan, tim marketing, dan tim analisis dan kajian halal.<\/p>\n<p>Sebelum diadakan pelatihan kepada warga Desa Carangwulung, tim produksi sudah terlebih dahulu melakukan formulasi terhadap yogurt yang akan dibuat. Pelatihan yang bertempat di Universitas Darul \u2018Ulum (Undar) Jombang ini dilaksanakan secara <em>hybrid<\/em>, di mana beberapa dosen dan mahasiswa ITS hadir secara langsung, sedangkan beberapa dosen yang memiliki keperluan bisa mengikuti secara daring dari Surabaya.<\/p>\n<p>\u201cKali ini kita bekerja sama dengan Undar karena di Wonosalam itu tidak ada jaringan internet sehingga sulit untuk mengadakan pelatihan daring dengan dosen yang lain,\u201d kata dosen Departemen Kimia ITS ini.<\/p>\n<p>Tepat satu bulan setelahnya, diadakan kembali pelatihan pada tanggal 25 September lalu. Pada pelatihan kali ini berfokus pada bagaimana syarat pendaftaran serta proses untuk mendapatkan Sertifikasi Jaminan Halal (SJH). Herdayanto mengakui bahwa proses untuk mendapatkan SJH ini cukup panjang dan rumit. \u201cOleh karena itu, kita mau mendorong warga desa ini serta melakukan pembinaan agar mereka bisa mendapatkan SJH ini,\u201d terangnya.<\/p>\n<p>Selama satu bulan berjalan, ditemui beberapa permasalahan yang bisa menghambat proses produksi serta penjualan. Yang pertama yaitu akibat tempat yang memiliki suhu rata-rata dingin, proses fermentasi yogurt sempat terhambat. Tim Abmas ITS pun memberikan solusi berupa pemasangan lampu pemanas yang bisa menjaga suhu tempat fermentasi pada suhu optimal yaitu 25 hingga 30 derajat celcius.<\/p>\n<p>Yang kedua yaitu terhambatnya proses pemasaran karena tidak banyak warga Desa Carangwulung yang memiliki gawai. Sementara, <em>branding<\/em> dan penjualan dari Wonoyo sendiri fokus pada <em>digital marketing<\/em>. \u201cPada permasalahan ini, kita masih upayakan untuk diselesaikan. Karena permasalahannya juga disana meski memiliki gawai, mereka tidak punya sinyal yang stabil,\u201d ucap lulusan S1 Kimia Institut Teknologi Bandung (ITB) ini.<\/p>\n<p>Yang terakhir, yaitu masih belum adanya SJH pada produk Wonoyo, sehingga belum bisa dipasarkan secara luas. Wonoyo bersama dengan produk lainnya yang dihasilkan oleh Wonosalam mulai di pajang di Koperasi Undar dan sudah bisa dibeli orang-orang. \u201cHasil penjualan ini akan dimanfaatkan untuk mendukung mereka dalam pengurusan untuk mendapatkan SJH ini, agar produknya bisa dijual secara luas,\u201d papar Herdayanto.<\/p>\n<p>Melihat semangat dari warga Wonosalam terhadap program yang diusulkan oleh tim Abmas ITS ini, Herdayanto berharap setelah mendapat SJH mereka bisa mengembangkan produknya agar lebih bervariasi lagi. Setelah UMKM-nya sudah lancar, diharapkan bisa mengembangkan produk-produk lain lewat payung UMKM ini. \u201cProduknya bisa dari susu, durian, dan kopi yang ada di sana. Tapi untuk sekarang kita selesaikan yang ada dulu,\u201d tuturnya mengakhiri.
