Karya inovasi tim ini ditujukan bagi para pelaku Usaha Mikro, Kecil, dan Menengah (UMKM) di industri makanan donat.<\/p><\/blockquote>\n<p>Untuk diketahui, proses fermentasi ragi roti yang baik dapat menghasilkan adonan donat yang bertekstur empuk dan disukai penikmatnya. Fermentor donat besutan Kelompok I Kuliah Lapangan Berbasis Pengabdian Masyarakat ini pun lahir dari permasalahan yang ada dalam UMKM Wid Donat Roti Kentang di daerah Kejawan Putih Tambak, Surabaya. Dalam proses produksi donatnya, mereka masih menggunakan proses konvensional sehingga hasil pengembangan adonan kurang maksimal.<\/p>\n<p>Proses fermentasi melibatkan mikroba Saccharomyces cerevicae yang sering dikenal sebagai ragi roti. Ragi roti tersebut dapat menghasilkan enzim yang merombak gula menjadi alkohol dan gas karbon dioksida (CO2). Fungsi utama dari fermentor ini ialah sebagai pengembang adonan. \u201cSuhu dan kelembabannya terkontrol sesuai ragi yang dipakai,\u201d ujar mahasiswa asal Bekasi ini.<\/p>\n<p>Lahir atas bimbingan dosen Prof Dr Arief Widjaja M Eng dan Dr Eng Raden Darmawan ST MT, fermentor donat ini memiliki kapasitas yang cukup besar. Fermentor ini juga dilengkapi dengan alarm yang berbunyi ketika adonan telah mengembang sesuai keinginan.<\/p>\n<p>Alat inovatif itu bekerja dengan memanaskan adonan donat pada suhu 35 hingga 37 derajat celsius. Setelahnya, pengguna perlu memasukkan adonan donat ke dalam loyang bertingkat pada fermentor, lalu menutup kaca fermentor. \u201cKalau sudah, tinggal menunggu hingga suhu mencapai kondisi optimal yang diinginkan,\u201d tambah Pandhu.<\/p>\n<p>Dalam waktu satu bulan untuk proses pembuatan alat serta pendampingan UMKM, Pandhu dan kelompok tentunya juga menghadapi beberapa tantangan. Banyak hal-hal terkait yang mempengaruhi berjalannya proses fermentasi yang perlu ia uji lagi. \u201cAkan kami uji terus dan cari variabel lain, sehingga alatnya nanti dapat bekerja lebih maksimal,\u201d tandas Pandhu mengakhiri.
