Ialah Dr Miftakhurrizal Kurniawan ST MT yang melakukan riset yang berfungsi untuk mengembangkan model ketelusuran rantai pasok halal dan keamanan pangan berbasis teknologi <em>blockchain<\/em> dan <em>Internet of Things<\/em> (IoT).<\/p><\/blockquote>\n<p>Dalam disertasinya, doktor yang akrab disapa Miftakh ini menjelaskan bahwa sistem ketelusuran pangan konvensional masih memiliki banyak keterbatasan, terutama dalam hal efisiensi dan akurasi data. Kondisi ini berpotensi menimbulkan risiko terhadap keamanan pangan serta menurunkan kepercayaan konsumen terhadap produk yang beredar.<\/p>\n<p>Menurutnya, ketelusuran merupakan elemen penting dalam menjamin keamanan dan kehalalan produk pangan dari hulu hingga hilir. Ia menjelaskan bahwa pendekatan ini mampu menggambarkan hubungan antar variabel secara menyeluruh dan dinamis. \u201cPendekatan ini mampu menggambarkan hubungan antarvariabel secara menyeluruh dan dinamis, sehingga dapat menghasilkan simulasi yang lebih representatif,\u201d ujarnya.<\/p>\n<p>Hasil penelitian menunjukkan bahwa penerapan model berbasis <em>blockchain<\/em> dan IoT mampu meningkatkan ketersediaan pangan sebesar 5 persen serta mengurangi <em>food waste<\/em> pada tingkat konsumen sebesar 3 persen. Selain itu, skenario peningkatan kapasitas penyimpanan petani terbukti memberikan dampak paling signifikan terhadap efisiensi sistem.<\/p>\n<p>Melalui model tersebut, menurut dosen Teknik Industri Universitas Brawijaya ini, sistem ketelusuran tidak hanya membantu meningkatkan efisiensi operasional, tetapi juga memperkuat transparansi dalam rantai pasok pangan. Hal ini dinilai penting untuk membangun kepercayaan konsumen terhadap produk halal dan aman.<\/p>\n<p>Miftakh berharap model yang dikembangkannya dapat diimplementasikan secara luas dalam industri pangan di Indonesia.
