Kampus ITS, ITS News \u2014<\/b> Produk segar atau <\/span>perishable<\/span><\/i> menjadi tantangan dalam bisnis ritel karena sifatnya yang mudah rusak. Menjawab persoalan ini, lulusan program doktoral Departemen Teknik Sistem dan Industri Institut Teknologi Sepuluh Nopember (ITS) Dr Winda Narulidea ST MT tawarkan model kontrak bagi hasil guna meningkatkan efisiensi dan kolaborasi dalam rantai pasok.<\/span><\/p>\n

Winda menyoroti bahwa banyak peritel produk segar yang menghadapi keterbatasan ruang penyimpanan. Hal ini mengakibatkan tingginya risiko kerusakan produk yang harus ditanggung oleh masing-masing individu. Kondisi ini diperburuk oleh tingginya biaya operasional dan minimnya insentif bagi pelaku rantai pasok untuk berinvestasi dalam teknologi pengawetan.\u00a0<\/span><\/p>\n

Situasi ini kian kompleks pasca pandemi berlangsung, terutama bagi peritel skala besar, seperti supermarket. Model bisnis yang selama ini bergantung pada stok bahan dalam jumlah besar menjadi sangat sulit untuk dipertahankan. \u201cKondisi ini menuntut adanya transformasi dalam pengelolaan rantai pasok agar lebih optimal dengan adanya digitalisasi yang semakin cepat,\u201d\u00a0 ujarnya.\u00a0<\/span><\/p>\n

Melalui disertasi berjudul <\/span>Model Kontrak Bagi Hasil Berbasis Konsinyasi untuk Koordinasi Rantai Pasokan Produk Perishable dengan Skema Vendor Managed Inventory <\/span><\/i>(VMI), Winda mengusulkan pendekatan kolaboratif antara pemasok dan peritel. \u201cPenggabungan kedua skema tersebut jarang dikaji secara bersamaan dalam studi sebelumnya yang berkaitan dengan bisnis ritel produk makanan segar,\u201d ujar lulusan program magister ITS tersebut.<\/span><\/p>\n

Menurut dosen di Universitas Internasional Semen Indonesia ini, VMI memungkinkan pemasok mengelola persediaan secara langsung di lokasi ritel. Sementara itu,\u00a0 sistem konsinyasi atau kerja sama bisnis dengan menitipkan barang kepada pihak lain untuk dijualkan membuat peritel hanya membayarkan produk yang benar-benar terjual. \u201cPendapatan dari penjualan kemudian dibagi berdasarkan proporsi yang disepakati di dalam kontrak,\u201d tambahnya.\u00a0\u00a0<\/span><\/p>\n

Penelitian Winda juga mempertimbangkan potensi dari investasi teknologi pengawetan secara kooperatif guna mengendalikan laju kerusakan produk di lokasi ritel. Perempuan asal Malang ini mencontohkan teknologi pengawetan seperti lemari pendingin berteknologi <\/span>Phase Change Material<\/span><\/i> (PCM) yang mampu menjaga kestabilan suhu meskipun pasokan listrik terganggu. Teknologi ini dinilai efektif dalam memperpanjang masa simpan produk segar sekaligus menekan potensi kerugian.\u00a0<\/span><\/p>\n

Selain melalui penerapan teknologi pendukung, doktor kelahiran 1989 ini pun turut mengembangkan dua model perencanaan kolaborasi, yakni horizon terbatas dan tak terbatas. Model horizon terbatas tepat diterapkan untuk perencanaan musiman atau kerja sama jangka pendek, sementara model horizon tak terbatas cocok untuk kolaborasi jangka panjang. \u201cPilihan horizon dapat disesuaikan dengan tujuan bisnis masing-masing pihak,\u201d terangnya.<\/span><\/p>\n

Lebih lanjut, Winda juga menggarisbawahi bahwa strategi kontrak terbaik sangat bergantung pada kondisi rantai pasok yang dihadapi. Skema seperti VMI, konsinyasi, dan bagi hasil terbukti efektif dalam mengurangi risiko kerusakan serta meningkatkan efisiensi. Selain itu, penyeimbangan antara keputusan penetapan harga dan pengisian ulang stok dengan karakteristik produk menjadi kunci dalam mengoptimalkan keuntungan rantai pasok secara menyeluruh.\u00a0<\/span><\/p>\n

Seiring meningkatnya permintaan akan produk segar dan konsistensi kualitas di pasaran,\u00a0 pendekatan kolaboratif ini diharapkan dapat menjadi solusi atas kompleksitas pengelolaan rantai pasok. Dengan demikian, penelitian ini juga mendukung penerapan Tujuan Pembangunan Berkelanjutan (SDGs) poin 12, yang menekankan pentingnya pola konsumsi dan produksi yang bertanggung jawab.
